VISITORS to Ballymena Show on Saturday can see Larne's Arlene Thompson (pictured right)- a member of Sainsbury's Try Team - cook this week's recipe, along with more tasty offerings.

Mexican-style tortillas (serves four)

Ingredients:

400g Northern Irish sirloin steak

3 tablespoons Mexican style paste

1 tablespoon olive oil

2 red peppers

2 yellow peppers

1 onion

4 Sainsbury’s wraps (tortillas)

fresh coriander

freshly ground black pepper

1 tub Sainsbury’s Be Good To Yourself sour cream

Method:

1. Trim off any fat and slice the sirloin steak into long strips. Mix in the Mexican paste and marinate for 2 hours in the fridge.

2. Slice the peppers and onions into long strips and stir-fry in the olive oil in a large griddle pan, for 4-5 minutes. Remove from the pan and keep warm.

3. Meanwhile, add the marinated steak to the very hot pan, with a little more olive oil if required, and stir-fry for 3-4 minutes until cooked. Return the peppers and onions to the pan with the steak and heat through.

4. Add a handful of roughly chopped coriander and season with black pepper.

5. Serve in a wrap with a large dollop of sour cream.
