Sweet potatoes are really delicious! They are also really good for you, as they are rich in vitamins and fibre. Try cutting them into chunks and roasting them in the oven with a drizzle of olive oil, seasoning, garlic and rosemary or make this really tasty mash, which uses healthy olive oil instead of butter.

Sweet Potato Mash

Ingredients:

900g sweet potatoes

450g potatoes

3 tablespoons crme fraiche

2 tablespoons extra virgin olive oil

Pinch of freshly grated nutmeg

Salt and freshly ground black pepper

Knob of butter

Method

1. Peel the sweet and ordinary potatoes and cut into equal sized chunks-not too small.

2. Place the ordinary potatoes into a large saucepan, cover with cold water and bring to the boil. Simmer for 5 minutes, then add the sweet potatoes, and simmer for a further 15-20 minutes, until all the potatoes are thoroughly tender.

3. Drain well and then mash together. Stir in the crme fraiche and olive oil. Season well with nutmeg, salt and pepper.

4. Reheat gently and turn into a warmed serving dish topped with a knob of butter.

Tip: sweet potatoes cook much quicker than ordinary potatoes, so make sure you dont overcook them.
