THIS recipe from Sainsbury's Try Team member, Arlene Thompson is perfect for breakfast.

But, if you haven’t time first thing in the morning dont worry, as it makes a fantastic dessert too!

Banana and Raspberry French Toast

Serves 1

Ingredients:

2 slices medium-cut white bread

25g butter

50g fresh or frozen raspberries

1 dessertspoon fair-trade honey

1/2 fair trade banana

2 large eggs

1 dessertspoon fair trade caster sugar

1 tablespoons milk

Icing sugar for dusting

Crme fraiche to serve

Method:

1. Butter the bread thinly on both sides.

2. Mash the banana in a bowl and stir in the honey and raspberries.

3. Beat the eggs and add the caster sugar and milk.

4. Dip the bread in the sweetened egg mixture so it is egged on both sides.

5. Spread the fruit mixture on one slice, leaving a slight space around the edges of the bread. Put the other slice on top and press down.

6. Carefully fry in a little butter in a medium hot pan on both sides, until golden and crisp, pressing gently so the fruit is pressed into the bread.

7. Dust with icing sugar and serve with a dollop of crme fraiche and any remaining fruit mixture.

Tip: This recipe makes a delicious dessert or breakfast, and blueberries or mixed berries could be used instead of raspberries.
