MAKE the most of your leftovers with this quick and savoury omelette, which Arlene Thompson demonstrated in the new Sainsbury's store in Carrick as a member of the Try Team.

“Each year the UK throws away a staggering 10 billion worth of food waste,” said Arlene. “This filling omelette is a great way to use up those leftover potatoes.”

Spanish Tortilla (serves two)

Ingredients:

1 tablespoon vegetable oil

4 medium eggs, beaten

1 small red pepper, sliced

1 medium onion, sliced

4 leftover boiled potatoes, thickly sliced

50g mature cheddar cheese, grated

Salt and freshly ground black pepper

1 tablespoon chopped fresh parsley

Method:

1. Heat the oil in a large non stick pan and fry the onions and peppers until softened. Remove and set aside.

2. Add the sliced potatoes to the pan and fry on each side until lightly browned. Return the peppers and onions to the pan.

3. Add the grated cheese and seasoning to the beaten eggs and pour over the fried potatoes, peppers and onions. Turn the heat down slightly and cook the egg mixture gently, until almost set. Place the pan under a hot grill to finish cooking.

4. Turn out and serve garnished with fresh parsley

5. Delicious with a green salad, grilled chicken and a spicy tomato chutney.

Top tip: when cooking with cheese try using a mature cheese to get the best flavour.
