SHOPPERS in Sainsbury's in Ballymena and Coleraine were treated to a demonstration of this week's recipe choice by Larne woman Arlene Thompson, a member of Sainsbury's Try Team.

Customers were amazed at the quality of the Basics range of ingredients and how a very tasty stirfry could feed a family of four for around a fiver. Arlene said Basics are the same great quality without the fancy packaging, and sometimes the veg are different shapes and sizes, but they are perfect for chopping up in a stirfry.

Sweet and Sour Chicken Stir-fry

Serves 4

Ingredients:

1 tablespoon olive oil

1 x 300g pack basics chicken breast pieces

x 650g pack basics vegetable stir-fry

1 basics red pepper, deseeded and sliced

1 red chilli, deseeded and finely chopped (optional)

100g basics mushrooms, sliced

1 jar basics sweet and sour sauce

1 pack basics instant chicken noodles

50g cashew nuts (optional)

Method:

1. Lightly toast the cashew nuts if using, by dry frying in a hot wok. Remove and set aside.

2. Heat a little olive oil in the wok and add the chicken breast pieces and stir-fry for 3-4 minutes until golden.

3. Add the vegetable stir-fry, red pepper, chopped chilli, if using, and the sliced mushrooms. Stir-fry for 1-2 minutes and then add the sweet and sour sauce, stirring continually until heated through.

4. Meanwhile, make up a pack of the instant chicken noodles and stir into the wok. Heat through and serve sprinkled with the toasted cashew nuts.
