LARNE woman Arlene Thompson - a member of Sainsbury's Try Team - this week shares a new Feed Your Family For a Fiver recipe.

She said using minced turkey in this recipe resulted in a really juicy and tasty chilli con carne which impressed her customers and her family.

Turkey Chilli Jackets

Serves 4

Ingredients:

500g pack turkey thigh mince

4 baking potatoes

28g pack fresh coriander

2 x 400g cartons basics chopped tomatoes in tomato juice

1 x 420g tin red kidney beans in chilli sauce

1 tablespoon olive oil

1 onion

1 teaspoon chilli powder

100ml semi skimmed milk

Method:

1. Preheat the oven to 200 degrees C, fan 180 degrees C, Gas 6. Place the whole baking potatoes in the oven on a baking tray for 40-45 minutes and cook until golden brown and tender.

2. Meanwhile heat 1 tablespoon olive oil in a large saucepan and add 1 peeled and roughly chopped onion. Add the turkey thigh mince, stir and cook for 6-8 minutes until browned.

3. Add 1 teaspoon chilli powder, the basics chopped tomatoes and the red kidney beans in chilli sauce to the pan. Stir then simmer for 25-30 minutes until tender.

4. Once the potatoes are cooked, cut them in half, and scoop the potato out of their skins, reserving the skins for serving. If you want the skins a bit crisper, return to the oven for 6-8 minutes. Mash the potato with the 100ml of milk and stir through pack fresh coriander finely chopped. Spoon the mashed potato back into the skins, season with freshly ground black pepper and serve with the turkey chilli garnished with the remaining chopped coriander leaves.
