Celebration time at Teddy’s

DOWN the years Teddy’s Bakery, Coleraine has helped thousands of people mark their big day with a unique celebration cake.

But this year they will reach a fantastic milestone of their own as the family-run business celebrates its 40th birthday.

Proprietor David Williams, who took over the business at 9 Bushmills from his father, is Coleraine’s answer to the ‘Cake Boss’ having made his first wedding cake at the age of 12!

And since then he has made thousands of cakes in all shapes and sizes for every occasion possible.

“It has been a labour of love for me,” David told the Coleraine Times.

“I grew up in the bakery with my dad. I watched him and Liam Fulton and developed my techniques from that over the 40 years of business.

“I have worked all over the world making countless cakes from traditional wedding cakes through to outrageous celebration cakes.

“One of the most spectacular cakes I produced was a seven tier white Belgian chocolate wedding cake.

“It took a lot of time and effort, but it was absolutely stunning when it was finished.”

Decorating with chocolate is just one of the techniques David has excelled in over the years.

“Chocolate is a very difficult substance to work with as it has to be melted correctly, then cooled on a marble slab so as you can mould it, but you only have a brief time frame to work with it,” he explained.

“But the results are amazing. We specialise in using Belgian chocolate and one of our most popular and visually stunning designs is the chocolate stiletto shoes celebration cakes.

“We also do photo cakes were we can print a design straight onto the cake as well as making iced discs for businesses to put on cakes for corporate events.

“Cup cakes are very popular at the moment and we have created a lot of fantastic designs.

“Of course we bake and ice wedding cakes to any specification, but we also offer an icing service if someone has their own cake.

“So really we offer cakes for any occasion. If you have an idea we can bake and put it on a cake for you. There’s nothing we won’t tackle!”

As part of their 40th birthday celebrations Teddy’s Celebration Cakes and Bakery has had a refurbishment. Part of this exciting development sees the creation of an in-store coffee shop with everything freshly made on the premises.

“At Teddy’s we’ve always prided ourselves in providing the customers with quality produce and now they can sample that in-store,” said David.

“We only use fresh ingredients, nothing is frozen, and everything is made on the premises on a daily basis from our handmade sausage rolls and pasties, through to our range of sandwiches.

“Customers can enjoy them in-store or take it away with them.”

David is also opening up his bakery and share some of his vast knowledge as he revealed plans to start an in-house cake decorating class come September.

“Come the Autumn we are starting cake decorating classes, which will be held in our bakery,” he said.

“It will cover all aspects of cake decorating. We will be able to cater for three or four people at a time.
