This mango and melon fruit salad with honey lime and mint, was a popular recipe prepared by young people attending the Carrickfergus Cookery School at Carrickfergus YMCA.

They learned tips on how to prepare a mango and discovered that they are very tasty and packed full of nutrients.

Mango and Melon Fruit Salad

Serves 4

2 fresh mangoes, peeled, stone removed and cut into 2 cm cubes

1 melon peeled, de-seeded and cut into 2 cm cubes

1 tablespoon runny honey by Sainsbury’s

Juice and zest of 1 lime

1 tablespoon fresh mint, finely chopped

1. Place the cubed mango and melon into a large bowl.

2. Add the lime zest and freshly squeezed lime juice.

3. Add the honey and freshly chopped mint and mix well.

4. Delicious as a healthy starter or a dessert.

Cooks’ tip: For a super quick dessert, Try adding one ball of finely chopped stem ginger to one cubed mango, place in a sundae glass and top with Greek yoghurt, and top with crushed ginger snap biscuits.

Did you know? Mangoes are very rich in vitamins A C and E.

They are also high in fibre.
