Mini Bolognese jackets

24 baby new potatoes

2 tbsp olive oil by Sainsbury’s

For the Bolognese

1 tbsp oil

1 onion, peeled and finely chopped

1 red or orange pepper, deseeded and finely chopped

1 carrot, peeled and finely chopped

1 x 500g pack lean steak mince by Sainsbury’s

1 x 500g carton creamed tomatoes by Sainsbury’s

pinch brown sugar by Sainsbury’s

dash balsamic vinegar by Sainsbury’s

handful fresh parsley, finely chopped

Preparation time: 20 minutes Cooking time: 40 minutes Serves: Makes 24 potato bites

1. Preheat the oven to 180°C, fan 160°C, gas 4. Put the potatoes into a bowl, prick each one once with a fork. Rub oil over potatoes.

2. Make the Bolognese: heat the oil in a saucepan and add the onion, pepper and carrot and cook until soft. Transfer to a plate. Add mince to the pan and brown.

3. Add vegetables back to the pan with the creamed tomatoes plus 500ml water, the sugar and vinegar and leave to simmer for 40 minutes, stirring occasionally until most of the liquid has reduced. Bake potatoes for 40 minutes until skins are crisp and insides fluffy. Cut slit in potatoes and fill with a little meat. Sprinkle with herbs.

For babies, finely chop or mash. For toddlers, cut into small pieces as finger food. For adults, as these are so mini you won’t need knives and forks, just pop them in!
