“SUMMER is just round the corner and for me that means strawberries and cream,” says Sainsbury’s Try Team member Arlene Thompson.

“Why not try this Eton Mess with a twist, where I’ve added fresh mint and zesty lime to the recipe along with the sweet fragrant strawberries. Its a fresh and creamy, light and fruity taste sensation! Great as an easy dessert for a summer barbecue.”

Eton Mess with a Zesty Twist

Serves 4

Ingredients:

200ml double cream

200ml half-fat crème fraiche

1 tablespoon caster sugar

1 lime, zest only

6 meringue nests (300g), crushed

1/2 x 225g pack raspberries, washed

1 x 454g pack strawberries, washed, hulled and sliced (reserve 6 for garnish)

½ x pack fresh mint, finely chopped, plus extra to garnish

1. Whip the double cream with the caster sugar until it stands in stiff peaks.

2. Fold in the crème fraiche and the zest of the lime.

3. Add the crushed meringue nests, the raspberries, strawberries and mint then fold it all together.

4. Spoon into six small or one large bowl, garnish with strawberries and mint leaves then serve immediately.
