Try it yourself ...Tropical Eton Mess

this week’s recipe from Arlene Thompson of Sainsbury’s Try Team is a classic Eton Mess with a tropical twist.

Banana, passionfruit and lime Eton mess

Serves 2-4

Preparation time: 10 minutes

Total 10 minutes

1 lime

2 ripe but firm bananas

1 vanilla pod

150ml double cream

2 teaspoons caster sugar

3 ready-made meringues or meringue nests

2 small ripe and wrinkly passionfruit

1. Grate the zest from the lime and squeeze the juice from half. Peel and slice one of the bananas into a medium bowl. Add the lime zest and juice and mash to a smooth paste with a fork.

2. Slit open the vanilla pod and scrape out the seeds with the tip of a knife. Add the cream, vanilla seeds and sugar to the mashed banana mixture and whisk to soft peaks.

3. Break the meringues into small pieces and lightly fold them into the whipped cream. Spoon into glasses or glass bowls. Slice the remaining banana and arrange on top of the meringues and cream. Halve the passion fruit, scoop out the pulp and spoon over the top. Serve immediately, while the meringue is still crunchy.
