Try this... Brownie Cheesecake with Berries

IN case you haven’t heard already, or taken the hint, Sunday, June 19 is Fathers’ Day!

Here is a great recipe to make, which is sure to bring a smile to his face and make you feel a million dollars.

Brownie Cheesecake with berries

Serves: 4; Preparation time: 10 Minutes; Cooling Time: overnight.

Ingredients: 4 readymade chocolate brownies, 100g soft cream cheese, 100g condensed milk, Juice of 1 large lime, Blueberries and raspberries, to serve, Icing sugar, for dusting.

Method: 1. Line a 20 x 9cm loaf tin with clingfilm overhanging the sides. Line up the brownies in the base of the tin.

2. Whisk the cream cheese, condensed milk and lime juice together with an electric hand whisk for 5 minutes, until very thick and creamy. Spoon over the brownies and level the top. Cover with clingfilm and chill overnight.

3. Carefully remove the cheesecake from the tin using the clingfilm. Cut into four, lift on to serving plates, scatter with the berries and dust with icing sugar.
