Celebrity chefs uncover Coleraine connection in North Carolina

The new series, which is now in its fourth year, sees the duo on a culinary road trip along the east coast of America to trace the historical influence of Ulster Scots food on the US today.

On the next episode, Paul and Nick journey to the heart of Southern Appalachia, a place where Ulster-Scots pilgrims settled in the 18th Century. Traditional Appalachian music is often considered to be influenced by the original Ulster-Scots settlers.

The chefs meet 7th generation ballad singer Sheila Kay Adams and Appalachian dancer and musician Phil Jamison to find out more about these traditions.

Using ingredients sourced locally, including trout from a local mountain river, Paul and Nick prepare a delicious 3-course meal for Sheila and Phil.

Big Food Trip is produced by Waddell Media and received funding from Northern Ireland Screen’s Ulster-Scots Broadcast Fund.

All recipes featured in the new series will be available at www.u.tv after each programme enabling viewers to recreate the Ulster-Scot inspired foods at home.
