Psst: Here's what the Queen and Duke had for lunch

The answer is the very best cuisine that Northern Ireland can offer.

Her Majesty and the Duke of Edinburgh were the guests of mayor, alderman Maura Hickey at a Civic Lunch in Royal Portrush Golf Club - where the 2019 Open championship will be staged.

And to celebrate the NI Year of Food and Drink, the Royal couple sat down to a fantastic three course meal.

Their starter was a light and delicious Smoked Glenarm Salmon and Prawn Mousseline on a bed of herb leaves, gherkin and caper salsa and wheaten cob.

The main course was Poached Rockvale Chicken, minced pork stuffing with a white wine and onion sauce.

This was accompanied by Colcannon potatoes, sea-salted White Park Bay potatoes and French Bean and Prosciutto parcels.

And for dessert the Royals enjoyed Ballylough rasperries and Lemon and Shortcross Gin Mousse.

To wash it all down guests sampled a £70 a bottle Louis Jadot Maon-Villages white wine and a Cotes du Rhone Reserve des Armoiries red.

The theme of the lunch, attended by Causeway Coast and Glens councillors was the “voluntary and selfless service of citizens.”

Among those present were local representatives of the RNLI and Community Rescue Service.
